PEACH AND PLUM COBBLER
This recipe tastes best when peaches are in season! It can also be made with other fruits added, like plums, strawberries, blueberries, or anything that looks fresh and ripe in the market. We love it with ice cream, but creme fraiche or pouring cream are also a decadent and delicious additions.
HERE IS WHAT YOU NEED:
TOPPING:
1 1/2 cups of all purpose flour
2 tsp baking powder
3/4 cup granulated sugar
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter , unsalted (cold)
1 cup buttermilk
1/2 teaspoon vanilla
rind of 1/2 lemon, grated
extra sugar for sprinkling over the top
sliced almonds (optional)
FILLING:
2 lb peaches, peeled and sliced into wedges
1/2 lb plums, cut in half, pits removed
2 tablespoons lemon juice
3 tablespoons of sugar
1 tablespoon of cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
rind of 1/2 lemon, grated
Preheat your oven to 375 F.
Peel, core and slice peaches, cut plums in half (or quarters if large), remove their stones and add both into a bowl. Over the top of the fruit, sprinkle lemon juice, sugar, cinnamon, nutmeg, salt, lemon rind and cornstarch, then toss to coat.
In another mixing bowl, mix together flour, salt sugar, baking powder, baking soda and lemon rind.
Ona large holes of box grater, grate cold butter over the flour mixture.
Gently toss grated butter into the flour mixture until butter is evenly mixed and coated into the dry ingredients. Mix together buttermilk and vanilla , then pour over the flour/butter mixture.
Stir with a spoon until just combined and no dry flour is visible.
Place fruit into a 9” or 10” round baking dish (or a square dish), then, with 2 spoons, dollop the topping over the top of fruit.
Sprinkle the top with sugar and sliced almonds (if using).
Bake for 40 to 45 minutes until the top is golden brown and the filling is bubbling.
When done, cool for 5 to 10 minutes, then, with a large serving spoon, scoop onto a plate or a bowl, topping with more of the fruit filling and your choice of ice cream, creme fraiche or cream.
